Chef Derek St. Romain Duck Gumbo

Duck Gumbo

Ingredients

  • 2 cups very dark roux (1½ cup vegetable oil, 1½ cup flour, cooked over low/medium heat for 1 hour stirring constantly until almost black!)
  • 3 pounds Andouille sausage
  • 3 cups diced sweet onion
  • 2 cups diced celery
  • 2 cups diced green bell peppers
  • 2 cups chopped parsley
  • 4 bay leaves
  • 6 cups beef stock
  • 2 cups red wine
  • 8 duck breasts

Instructions

  1. Serve over your favorite rice!
