Split Pea Soup with Country Ham

Thick, hearty, healthy and full of unique flavors - Don't be too shy to try this Split Pea Soup recipe!It's naturally savory with an almost smoky taste by adding in some country ham. A protein packed soup that offers up taste without sacrificing all the healthy benefits, and unbelievably we think it tastes even better when cooked in advance for enjoying later as it improves the flavor combination & helps to thickenup the dish. If you've never tried it before, this is your sign to give it a go with a steaming bowl! Pairs really well with fresh cornbread or a slice of white loaf bread.

Ingredients

2 cups dried split peas (soaked overnight)
2 tablespoons olive oil
1 cup chopped carrots
1 cup chopped leeks
½ cup chopped celery
2 quarts chicken broth
1 country ham bone, ham hock or neck bone
1 cup chopped cooked country ham

Directions

Step 01: In a large dutch oven heat oil over medium heat. Add carrots, leeks, and celery and saute until soft but not browned, about 8 minutes
Step 02: Add chicken broth and ham bone, bring to a boil and reduce to simmer. Let this cook coveredfor 30 minutes
Step 03: After 30 minutes add peas and cook on a low simmer for 1 hour or until the peas are tender
Step 04: Remove ham bone. Add in the chopped pre-cooked country ham and stir to warm throughout
Step 05: Serve and enjoy with fresh cornbread or sliced loaf bread!
