Chicken Fried Rabbit
Rabbit meat is very healthy and has great qualities in flavor, aroma and texture. Give this chicken fried rabbit recipe a taste and enjoy your take from this season's hunt! Pairs great with homemade mashed potatoes & gravy or spread over white rice.
Ingredients
Chef’s Note: I recommend boiling the rabbit for 1 ½ hours or more to make it tender.2 rabbits quartered
2 cloves garlic
2 sprigs of rosemary
4- 6 cups water
1 tbsp salt
For Breading:2 cups flour
¼ cup cornstarch
½ tsp salt
¼ tsp pepper
½ tsp onion powder
½ tsp garlic powder
2 tsp Carolina Cooker® Cajun
2 cup buttermilk
1 Tbsp Carolina Cooker® hot sauce
Oil for frying
Directions
Step 01:
Rabbit Prep:In a medium saucepan add 4 cups of water (more may be needed depending on size of rabbits) add in the garlic cloves, rosemary sprigs, 1 tbsp salt and rabbit meat. Bring to a boil and boil for about 1.5 hours or until rabbit meat is tender. When the rabbit is done boiling, place on a plate and let cool. (you may want to put some paper towels under it to soak up the water.Frying:Heat oil in a deep fryer or large pan on the stove to 325-350 degrees.
Step 02:
In a large bowl whisk together flour, cornstarch, salt, pepper, onion powder, garlic powder and cajun seasoning.
Step 03:
In another bowl whisk together buttermilk and hot sauce
Step 04:
Place your boiled rabbit into the buttermilk mixture and make sure to coat it well.
Step 05:
Place your rabbit into the flour mixture and make sure to coat all parts of the rabbit with the flour. Repeat until all the rabbit is coated with flour.
Step 06:
Place rabbit in a deep fryer and fry for 3-5 minutes or until golden brown and crispy.
Step 07:
Remove rabbit and place on a paper towel lined plate to soak up remaining oil. Repeat on the remaining rabbit pieces.
Step 08:
Once all the rabbit pieces have been fried, you can either toss in your favorite sauce or serve as is. Enjoy with a side of fries or mashed potatoes.
