Venison Steak and Gravy

Ingredients
2 lbs Venison Steaks
1 Cup Yellow Onion, sliced thin
¼ Cup + 2 Tablespoons Grapeseed Oil
¼ Cup All Purpose Flour
3 Cups Whole Milk
2 Tablespoons Carolina Cooker® Cajun Seasoning
Salt and Pepper to taste
¼ Cup Chives, chopped fresh for garnish
Directions
Step 01:
Heat 2 tablespoons of grapeseed oil in a cast iron skillet over medium heat
Step 02:
Once the pan is hot, season the venison steaks with salt and pepper on each side. Add the seasoned steaks to the pan and sear
Step 03:
Cook for about 2 minutes each side and remove from the pan
Step 04:
Add in the onion and saute until translucent, about 4 minutes
Step 05:
Remove the onions from the pan
Step 06:
Add in the flour and oil to the pan and stir to combine
Step 07:
Toast the flour lightly for about 5 minutes, stirring constantly until it develops a light brown color
Step 08:
Add in the milk and cajun seasoning. Stir to combine and let the milk thicken into a gravy. Continue to stir until the gravy reaches your desired consistency
Step 09:
Place venison and onions into the gravy. Mix together gently
Step 10:
Plate the venison and onions with an extra scoop of gravy over the top, and garnish with fresh chives. Goes great with rice or your favorite roasted vegetables side dish!
