Cornflake Potato Casserole
We may have created the perfect side dish with this one! Full of flavor with creamy potatoes topped with a golden brown crust, this potato casserole is comfort food at its best. Bake up this recipe in your favorite Carolina Cooker® cast iron - and make those other casseroles jealous!
Ingredients
1 stick butter, melted
½ pint sour cream
2 cans cream of mushroom soup
2 cups cheddar cheese, shredded
½ cup onion, chopped
10 to 12 small potatoes, cubed
2 cups corn flakes, crumbled
Parsley, chopped fresh for garnish
Directions
Step 01:
In a large mixing bowl, combine the potatoes with melted butter, sour cream, cream of mushroom soup, cheddar cheese, and chopped onion. Mix well.
Step 02:
Pour the mixture into an enamel casserole pan.
Step 03:
Sprinkle the crumbled corn flakes over the top.
Step 04:
Bake at 350°F (175°C) for 30 minutes.
Step 05:
Serve immediately topped with fresh parsley and enjoy!
