Ingredients
1 pound butcher's bacon, cut into 1-1/2" segments
1 pound Yukon gold potatoes, cubed
1 yellow onion, chopped
1/2 pound okra, chopped into coins
1 cup grated hoop cheese
4 eggs
Scallions chopped to garnish
Directions
Step 01:
In a deep skillet over medium heat, add bacon and allow fat to render while stirring periodically.
Step 02:
Once bacon is golden brown remove and plate.
Step 03:
Add potatoes, onions, and okra to bacon fat and stir occasionally. Okra will begin to get slimy, just continue to cook and stir as this will cook out. Once the slime has cooked out and the potatoes are cooked through, add hoop cheese and bacon back in. Stir to combine.
Step 04:
Make 4 wells in your mixture as holes for the eggs
Step 05:
Crack an egg into each hole and place the lid on top of your skillet.
Step 06:
Once eggs have cooked through with the whites showing solid and the yolks having a sheen, remove the lid, add scallions, and serve.
