Low Country Boil & Steamed Oysters

Bring the taste of the coast right to your backyard! A mesh of flavors & textures featuring succulent shrimp, smoky sausage, sweet corn and hearty potatoes - all united to create a flavorful ensemble. Sometimes called Frogmore Stew, Tidewater Boil or Beaufort Boil, one thing is for sure. No one will go home hungry! This recipe features our take on the Low Country Boil in the Carolina Cooker® Steamer/Boiler cart that can hold 140 quarts easily. A generous sprinkle of Carolina Cooker® Seafood Seasoning adds that final touch of zest to complement fresh seafood! Best served with melted butter, crusty bread, a cold beer and good friends.

Prep: 10 minutes Cook: 1 hour Serves: 8

Ingredients

4 lbs Shell on Shrimp
4 lbs Red or Yukon Gold Potatoes, if small leave whole, if large cut in half
4 yellow Onions, peeled and quartered
4 ears of Corn, cut into thirds
4 lbs Potatoes
2 lbs Smoked Sausage (Kielbasa, Andouille, etc), cut into bite size pieces
1 pack Carolina Cooker® Seafood Boil Seasoning
½ bushel Oysters

Directions

Step 01: Fill the Steamer/Boiler with enough water to cover what you have in the boil, for the above ingredients we filled it to about an inch below the max fill line
Step 02: Light the Steamer/Boiler once there is water in the vat and turn the heat to high, watching for the water to just come to a boil
Step 03: Add in Seafood Boil Seasoning and stir
Step 04: Add in the potatoes, close the lid and cook until just fork tender, about 30 minutes
Step 05: Add in the quartered onions and corn and cook 12 minutes
Step 06: Add in the sausage and lay the oysters out on the steamer tray to a single layer. Place the steamer tray onto the boil basket and close the lid to steam the oysters. Cook for 10 minutes
Step 07: After 10 minutes, turn the burner off and remove the steamer tray to serve the oysters.Place the shrimp in the boil mixture and stir, allow to steep in the water for about 5 minutes
Step 08: After 5 minutes remove the boil basket to serve alongside the steamed oysters and enjoy with Carolina Cooker® cocktail sauce and fresh lemon wedges
